Salmon with Pineapple Orange Salsa

This is an outstanding salmon dish introduced to me by an outstanding cook - my sister. She shared this recipe with me when I was first dating my now-husband. I think it's one of the reasons he married me. This and my chocolate chip cookies with toffee bits, but that's another blog.

The salmon has a light, caramelized coating and the fruity/spicy salsa gives it some extra sweetness and zip. The salsa is so tasty, you'll want to heap it on the fish, almost like a small side dish. It's also very easy to prepare. So if you're trying to impress a future husband, or just serve your family something a little different, you're in for a treat with this simple and healthy dish.

Pineapple Orange Salsa

1 can crushed pineapple, drained

2 oranges, cut up in small pieces

2 Tbls. chopped cilantro

1 jalapeno pepper, chopped

1 green onion, sliced

1 tsp. finely grated orange zest

Mix all the ingredients together and refrigerate until serving. (Pepper handling tips: wear latex gloves and dispose afterwards. Avoid touching your face or eyes after handling a hot pepper. Wash your hands well with soap after handling the pepper.)

Salmon

1 large piece salmon (About enough to feed 4 - 6 people)

2 Tbls. sugar

1 tsp. salt

1/4 tsp. pepper

1/2 Tbls. grated orange zest

Mix all the ingredients together (except the salmon) and rub on the fish. Let set for 30 minutes.

Place salmon on foil and then on a baking sheet. Bake at 400 degrees until cooked through (cooking time depends on thickness of fish, but approximately 15 - 20 minutes.) Serve with Pineapple Orange salsa.

I am admittedly not a seafood person, but I want to be (wonderful health benefits), so I'm trying to cook it more often. I will definitely try this recipe. It sounds really yummy.
