They call it "trees." I like broccoli alone as a side dish, in stir fry, or with pasta. If you like broccoli, but are looking for a new way to prepare it and "jazz it up," give this recipe a try. For this recipe you'll need: One head of broccoli 2 TB butter Zest of ½ a lemon Juice of ½ a lemon ¾ cup pine nuts (pignoli nuts) 1 tsp. kosher salt 1 tsp. garlic powder To Make this recipe: Cut up one head of broccoli in to bite-size pieces (or slightly larger). Place in a microwavable dish, add 2 TB water, cover, and cook for 4 minutes on high. In a medium skillet, melt butter. Add broccoli, lemon zest, pine nuts, kosher salt, and garlic powder. Cook for 3 minutes over med-high heat. Add lemon juice and continue cooking one more minute. Remove from pan and serve warm. This makes a delicious side dish to pasta meals or meat dishes of any kind (beef, chicken, fish, pork). **If you like your meals spicy, add ½ tsp. of crushed red pepper flakes while sautéing. **You may substitute olive oil for the butter if preferred. **You can cut the butter amount in half to lighten this dish.
