Simple Super Bowl Sidesby Michele Cheplic | More from this Blogger 25 Jan 2009 06:58 PM A week from now millions will gather around their big screen and fill their faces while cheering on the combatants of Super Bowl XLIII - the Pittsburgh Steelers and the Arizona Cardinals. The big game kicks off on February 1st and if you don't already know what you will be serving up to your super hungry Super Bowl guests, you might consider the following super simple recipes: FETA AND ARTICHOKE DIP Ingredients: 1 (14 ounce) can artichoke hearts, drained, chopped 8 ounces feta cheese, crumbled 1 cup mayonnaise 1/2 cup Parmesan cheese, shredded 1/2 cup roasted red peppers, chopped 1 garlic clove, minced 1 chopped Roma tomato 2 chopped green onions Directions: Preheat oven to 350 degrees. Mix first 6 ingredients together. Place mixture in a pie pan. Bake 20 to 25 minutes. Remove from oven and top with tomatoes and green onions. Serve warm with pita bread, bagel toast, crackers or even tortilla chips. BROCCOLI CHEESE DIP Ingredients: 1 large box of Velveeta cheese, cubed 1 (8 ounce) cream cheese, cubed 1/2 cup heavy cream 1/2 package dry Italian dressing mix 1 can of cream of celery soup 2 (10 ounce) boxes chopped broccoli Directions: Place first ingredients into a crock pot. Cook on low for 1 to 2 hours until cheese is melted. Stir well. Add thawed broccoli and cook another 30 to 45 minutes until broccoli is tender. Serve with crusty French bread or vegetables for dipping. CHUNKY CHILI Ingredients: 3 pounds ground beef 1 minced onion 1 green pepper, diced 1 red pepper, diced 2 cans diced tomatoes in juice 2 cans tomato sauce 2 cans kidney beans (rinsed and drained) 2 cans tomato juice 1 beef bouillon cube 3 tablespoons chili powder 2 tablespoons cumin 1 tablespoon onion powder 1 teaspoon cayenne pepper 1 teaspoon paprika 2 teaspoons salt 1 teaspoon pepper 1 tablespoon chopped garlic Water Directions: Brown beef in oil and add peppers and onions, cook for 5 minutes. Add all of the canned items and seasonings. Cover with water and reduce and simmer on low for about an hour. Serve with cornbread or crackers.
