Simple Yet Delicious Chicken Recipesby Michele Cheplic | More from this Blogger 19 Apr 2009 09:44 PM If you are like me, and stock up on chicken when it's on sale, then you can always use a few more chicken recipes to add to your collection. Here are some of my favorite simple yet delicious chicken dishes: EASY CROCKPOT CHICKEN Ingredients: 2 (10.75-ounce) cans of condensed Cream of Mushroom soup 1 16-ounce container of sour cream 1 teaspoon dried minced onion 1 teaspoon dried parsley 1 cup Marsala wine 1/4 teaspoon garlic powder 1 cup milk Salt and pepper to taste 6 to 8 boneless, skinless chicken breast halves 1 8-ounce package of sliced mushrooms 1/4 cup grated Parmesan cheese Directions: In a slow cooker, mix together first 7 ingredients. Season chicken breasts with salt and pepper. Place chicken in the crockpot and cover with soup mixture. Cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours. Stir in mushrooms and Parmesan cheese and cook another two hours. Serve hot with rice, pasta or potatoes. PECAN CHICKEN Ingredients: 4 skin-on chicken breasts 3 ounces goat cheese 1 tablespoon chopped fresh mint Ingredients for Sauce: 2 cups cranberry juice 1/4 cup sugar 2 tablespoons vinegar 2 cups beef broth 1 teaspoon butter 1 tablespoon pecans, toasted 1/2 cup whole cranberries Directions: Preheat oven to 350 degrees. Reduce cranberry juice with sugar and vinegar by two-thirds. Add beef broth and reduce by half, season with salt and stir in butter. Mix together the mint and goat cheese, then lift the skin of the chicken and place a tablespoon underneath. Season the chicken with salt and pepper, sear skin side down on the stove, flip and finish in the oven. Place chicken on plate, top with sauce and sprinkle with cranberries and toasted pecans.
