Green up Your Memorial Day

Memorial Day is a day to honor all those that have served in the military. It is also a day when a lot of people will have family and friends over and grill out. (This image is from MorgueFile.) But, you can still be green while doing all of this. If you are going to visit a loved one’s grave, take real flowers. I know a lot of people tend to purchase plastic flowers because they last longer, but real flowers will naturally decompose, whereas plastic flowers will eventually have to be removed by the groundskeepers and who knows when … Continue reading

Crusty Meatloaf Using Leftovers

Since Michele is sharing her recipes for leftovers I thought I’d share one of mine too. This meatloaf recipe is one that when I first became gluten free, I took on nearly every picnic we went to as it works well cold. It is also an excellent way of using leftover meat from a roast lamb or beef, though I wouldn’t recommend using corned beef. The crusty texture comes from the cheese batter poured over the loaf. Crusty Meatloaf Ingredients 1 egg yolk Half cup sifted quinoa flour Half cup water 12 ounces cooked lamb or beef 6 ounces shredded … Continue reading

Skewer Your Meat

Our barbecue gets plenty of use for cooking roasts as well as barbecuing. These recipes both go well on skewers on the barbecue, though you could also put them under the griller if you prefer. Although they take a bit of marinating time, you could be doing other things while they are marinating. Set a timer to remind you when they are ready. The advantage is they don’t take long to cook. HINT Although I have used beef in these two recipes you could just as easily use lamb or even chicken if you prefer. Spicy Beef Kebabs Ingredients I … Continue reading

Fish Dishes Your Kids Will Eat

If your child’s fish favorites consist of anything battered and deep-fried, then you might consider the following recipes. The Citrus Swordfish Skewers and Fresh Fish Tacos are as pleasing to the eyes as they are to the palate. What’s more, the fun finger foods allow you to infuse fish into dishes your kids are already familiar with. CITRUS SWORDFISH SKEWERS Ingredients: 1 cup freshly squeezed lemon juice 2 teaspoon fresh lemon peel, finely grated 1/4 cup capers with juice 1/2 cup olive oil 4 teaspoons garlic, minced 2 pounds fresh swordfish, cut into 1-inch cubes 24 pieces red bell peppers, … Continue reading

Grilling on a Budget

With Memorial Day on its way and summer not far behind, you may be thinking about dusting off that grill and getting the party started. Here is how to spend less on grilling this season. Skip the Paper Products If you will be entertaining more than once, skip the paper products and invest in some pretty plastic pieces that can be reused. This will make a lot of financial sense. If you score thrift stores and clearance racks, you’ll probably wind up spending less than the paper products even for just one use! Go Light on the Meat Make sure … Continue reading

Are You Substance Dependent?

It stuck home to me recently how easy it is to become dependent on a particular substance. I’ve been doing a lot of reading lately about the problems caused by caffeine, sugar and preserved foods and making an effort to change the buying and eating habits in our household. That meant cutting out caffeine. I thought never thought I was caffeine dependent, until I went off it. True I had a cup or two of coffee a day and a couple of cups of tea at breakfast, but given the weak strength I drink my black tea and milk coffee … Continue reading

Getting it Wrong

Sometimes you can have the best intentions and think you are doing the right thing and still end up getting it wrong. One of the biggest problems these days for many people are food intolerances. Wheat and gluten allergies, peanut allergies, dairy allergies etc and you wonder, ’where did we go wrong?’ Were these things not around years ago or just not recognized? At one stage there was a big emphasis on eating more fiber and because of family history with cancer I tried to eat more bran and such products. The result was I ended up with wheat and … Continue reading

Tangy Lemon Meringue Pie

Ever since I discovered the gluten free frozen pastry, I’ve been finding it a great help in the kitchen. Thanks to friends I have a lovely supply of fresh lemons at present. Our lemon tree is still in its early stages of producing, so the most we get is a couple. Last night when we were having guests for dinner I made lemon meringue pie which is my husband’s favorite dessert. HINT I’ve already given you one recipe for lemon meringue pie but this one could be even nicer. It is very tangy, which I love. The sweetness of the … Continue reading

Back-to-School Battle: Lunch

With millions of students heading back to class next week parents are bracing for the obligatory back-to-school battles with their children over clothes, transportation… and lunch. Some kids simply refuse to eat school lunch, which leaves moms and dads scrambling to come up with homemade meals that are both healthy and tasty. For many parents that means buying packaged lunches, which may look nutritious, but are actually far from it. For example, did you know Lunchables’ Maxed Out Cracker Stackers Combo Ham and Cheddar—-a popular lunch choice among middle school students–contains 22 grams of fat, 50 milligrams of cholesterol and … Continue reading
