Smoked Sausage in a sauce

With Christmas over now, my family is already tired of the usual left overs and wanted something different. So, I decided to totally change things and make a smoked sausage dish. This dish takes a while to make, but it is worth it. I always make extra so I can have some the next day on a bun. It is really good and filling. It’s the perfect thing to fix when you are expecting company over because there is so many ways to serve this dish. Experiment and see which way you would like to serve it. You will need: … Continue reading

Getting a Good Night’s Sleep – Part 1

When I was younger, I never thought about having a rough’s night sleep. I slept like a baby and didn’t understand why some people complained about not sleeping well. As I edge towards 50, I now understand what it is to lose sleep. So are there some dos and don’ts to getting a good night’s sleep? There certainly is when it comes to food. A lot of times when you can’t sleep, you may think heading for a midnight snack will help make you sleepy. You should avoid preserved and smoked meats. So that means no ham sandwich or leftover … Continue reading

Nothing to Eat? Before You Head to the Store Look Again

I got an email on one of my homeschooling groups this week from a mom trying to stretch the foods in her pantry. She was in a pinch this month, and wanted to survive the month without going shipping. She detailed the items in her pantry down to the number of eggs and how many pounds of meat. I didn’t sound like much. Still the group was able to come up with many meals that she could make without going to the grocery store. Here are some ideas for meals that anyone can make with nothing in the house but … Continue reading

Fat Tuesday Recipes

Today is Fat Tuesday. In Hawaii it’s Malasada Day and in Polish communities it’s known as Paczki Day. A paczki (pronounced poonch-key) is a delicious, dense, deep-fried, cream- or fruit-filled doughnut that puts the fat in Fat Tuesday. Weighing in at nearly 400 calories, the paczki is almost as delightful (in my opinion) as the malasada, which is also a doughnut-like treat topped with sugar and devoured by millions on this day before Ash Wednesday. If you can’t make it to New Orleans to celebrate Fat Tuesday, but you want a taste of real Cajun cooking, then consider making the … Continue reading

Corn on the Cob

Summer time is my favorite time of year to be a food writer. The possibilities are endless and even the rising food prices barely touch my farm fresh produce. Corn on the cob is one of my favorite summer time indulgences. It reminds me of everything good about childhood and back yard barbecues–yes, it’s hard to believe that food can sometimes elicit such an emotional response in us. Over the years I have revamped my corn on the cob over and over again. Here are a few of my tips: Add Sugar to the Water This is a tip I … Continue reading

Cultural Smorgasbord—-Mexican Rib Eye Steaks and German Brats with a Twist

I grew up in Hawaii, which is well known for its cultural diversity and equally varied cuisines. In the Aloha State it’s not unusual to have a breakfast of Japanese rice, Portuguese sausage and Hawaiian sweetbread; lunch of Filipino Chicken Adobo and Chinese noodles; and dinner consisting of Italian pasta and kalbi (Korean short ribs). As we countdown to Independence Day I thought it would be appropriate to salute our nation’s wonderfully rich cuisine with the following ethnic dishes that can be easily grilled up for a classic Fourth of July picnic. The first recipe features an All-American rib eye … Continue reading

That’s when for the first time in the history of college football the unbeaten University of Hawaii Warriors will be playing in a MAJOR post-season bowl game. In just a few days the Warriors will go head-to-head with the big Dawgs of Georgia in the Sugar Bowl–smack in the middle of downtown New Orleans, Louisiana. To say this is HUGE for … Continue reading
