Graduation Potluck: Fruit Muffins and Hearty Ham Bakes

My daughter is not even in school yet so graduation day is a long ways off. However, my friend’s daughter is graduating from eighth grade in a couple of weeks and to celebrate she is hosting a brunch following the morning ceremony. For a variety of reasons (not the least of which is the fact that she has six other children and most of the people attending the party are very close friends and family members) she decided to make the brunch a potluck. Which means I had to find recipes to make that could be doubled (or tripled) and … Continue reading

Pie in the Middle Muffins

I think my new theme for the food blog is going to be after school snacks. Don’t worry, I’ll get to sharing other fantastic recipes soon enough but it seems that my recipe searches as of late are centered around finding easy to prepare, good after school snacks. I’m also still on the apple theme, probably because we’re looking at going apple picking in a few weekends. This is not my original recipe but rather comes out of one of my Taste of Home magazines. This muffin is labor intensive if you’re chopping the apples and making the apple filling … Continue reading

Freezing My … Off

This week, I am making it one of my frugal goals to freeze a little something each and every day. Today it is mashed potatoes and also banana chocolate chip muffins. Yesterday, it was sour cream corn muffins, and the day before it was regular chocolate chip muffins. I’ve been doing this by making extra and then packing up some aspect of our regular meals, such as the leftover muffins from breakfast or preparing a whole six pounds of mashed potatoes (before the butter and milk). By doing this, I really don’t have to do much additional preparation. I measure … Continue reading

Add in Pumpkin to Take Out Fat

The seasons are changing and autumn is on the way. Pumpkin season will arrive right alongside it. The time of year for pumpkin lattes, cream cheese, pie, cakes, muffins, cookies, soup, and more is upon us and I am grateful. I love to visit the pumpkin patch and pick out some pie pumpkins to make some delicious treats with my family. Every year we try something new and it seems the applications for pumpkin is endless. Adding in fresh pumpkin to recipes or making pumpkin recipes will give you a boost of healthful nutrients while being low in calorie. Health … Continue reading

Budget-Friendly Commencement Ideas

Who says you have to drain your bank account to celebrate your child’s graduation? Even penny-pinching parents can honor their son or daughter’s academic success in style. The key is to think frugally and creatively. For example, while you may not be able to serve up a five-course meal for 200 at a fancy restaurant, there are ways you can feed all of your graduate’s friends if you budget carefully. One way is to select a themed buffet. Mexican food makes for a great buffet option and you can spice up the meal by offering fun options such as a … Continue reading

“Blinkie” and Tear Pad Coupons – Great Double Deals!

Some of the sources of coupons that are great to use are right there in the store! Look for “blinkie” dispensers, which have coupons by the product on the shelf and have a blinking light to get your attention. Look also for tearpads. These are great sources of promotions. Blinkies are often short dated and expire within a month or so, but tearpad coupons will have varying expiration dates. I visited Publix yesterday, and without too much effort, here is a list of the coupons I picked up while I was there: Blinkies: Biz Laundry Detergent $1 Exp 3/15/10 Egg … Continue reading

I Deserve to Say “No!”

First, let me start off by saying that I had a really great workout on Saturday. I was able to run farther than I ever had before without stopping due to lack of oxygen, muscle strength or energy. I felt like I could have kept going all day. Of course, having learned my lesson well from my recent bout with a torn and inflamed meniscus in my knee, I made sure not to push it too much. On Sunday my husband and I had a church function that started very early and lasted for five hours. I was nervous about … Continue reading

More Easy and Affordable Snacks for Your Holiday Party

Ground beef is one of the most affordable meats in the market, which is why you don’t need to wait for it to go on sale before you buy. If you are entertaining for the holidays ground beef should be at the top of your shopping list. Not only is it a budget-saver, but it’s also extremely versatile as seen in the following simple yet delicious party dishes I like to make this time of year: GROUND BEEF STUFFED JALAPENO PEPPERS Ingredients: 8 ounces ground beef 1/2 cup finely chopped white onion 1/2 teaspoon salt 1/2 cup drained canned diced … Continue reading

Autumn Recipes: X is for X-shaped Chocolate Cookies

Yeah, I know, it’s not very autumnal. But you try coming up with foods that begin with the letter X and then combine them to create an edible creation. There was xanthareel, a yellow eel used in medicinal foods, and xanthan gum, which is produced from the fermentation of corn sugar (it’s commonly used as a thickener in foods such as yogurt, sour cream and salad dressings), but neither struck me as the basis for family-friendly recipes. So, I got a bit creative and went for another interpretation: X-shaped treats. The following recipe for playful chocolate cookies molded in the … Continue reading
