Crockpot Mashed Potatoes

If you want an extra creamy version of mashed potatoes that is easy to fix, you might want to consider this recipe. Rich and hearty, this mashed potatoes recipe yields a dish that is decadent like a rich savory dish instead of fluffy. For a long time, this was the only mashed potato recipe I prepared during the holidays, because it was requested so often, and it was easily portable. Make sure to stir the edges of your pot at least once, to avoid browning. You can prepare these mashed potatoes in advance, but you’ll get best results when you … Continue reading

Losing Weight with Potatoes?

I once went on a potato diet. Now, you would not think that this was such a good idea because many people seem to feel that potatoes are very fattening. Did you know that a medium baked potato contains only about 160 calories? A medium baked potato is considered to be approximately 3 inches in width so that is a pretty good-sized potato. If the thought of eating a potato without any toppings or additives on it puts a lump in your throat, rest easy. You can also put 2 tablespoons of low-fat sour cream on top of it and … Continue reading

Battered Potatoes

I was surprised at how delicious these little potato bites were. As a testimony to their ultimate yumminess–all five of my children ate them. (With appropriate amounts of ketchup of course.) These are great little tidbits if you’re looking to serve something for a party or as an appetizer. I think the secret is in the salt blend and what is nice about that is you can customize your own version. In my version, I don’t use pepper because my kids don’t like it. But of course, if you like pepper–pepper away! You will need: 8 medium potatoes 2 cups … Continue reading

Thanksgiving Potatoes

Mashed potatoes are a staple at the Thanksgiving dinner table. Well, I take that back. Potatoes are a staple at the Thanksgiving dinner table. I am actually rather biased against plain old mashed potatoes at Thanksgiving. I like mashed potatoes, love them as a matter of fact, but I just feel like for such an extravagant meal, you could do better than smashed up roots. With that said, here are my offerings for perfect mashed potatoes, and some other dressed up versions. Perfect Mashed Potatoes You will need: 10-12 mashed potatoes ½ to 1 stick of butter ¼ cup of … Continue reading

Creamy Crockpot Mashed Potatoes

Why put your mashed potatoes to cook in the crockpot? Because the additional ingredients will meld with your potatoes, giving you amazing flavor. I tend to serve this dish at family gatherings because I can leave the crockpot and guest can help themselves to warm, amazing mashed potatoes. In my opinion, there is nothing worse than cold mashed potatoes, except maybe cold gravy. And the crockpot tend to get food throughly hot, so even with the crocpot turned off, the mashed potatoes will stay steaming for a long time. Although this recipe makes a lot of potatoes, I find that … Continue reading

The Leftover Challenge—Potatoes!

A few weeks ago I posed a leftover challenge. “Give me your leftovers,” I said. “And I’ll give you a recipe.” One reader took me up on the challenge and I gave them a tasty recipe for their leftover brisket. But other than that, I haven’t received a single request. So I’m posing the challenge one more time. Tell me, what is in your refrigerator or pantry that you need to find a recipe for? Here’s an example to get you started—last night we had “fried” potatoes, southern-style. I cooked the potatoes on the stovetop with onions. So today, instead … Continue reading
