Sunday Brunch Souffle

The name souffle comes from the French verb "souffler", meaning to blow up or puff up. A souffle is a fluffy dish that includes eggs. You can combine other ingredients with it, depending on whether if will be served as a main dish or a dessert. If you are looking for something that is easy and you can make ahead of time then just pop in the oven, try this recipe.

For this recipe, you will need one pound of smoked sausage, 12 slices of whole grain white bread, American cheese (slices), green onions, one green bell pepper, dry mustard, one 10 ounce package of frozen spinach, eggs, milk, and corn flakes.

To prep for this recipe, chop your green onion and green bell pepper and set your spinach out to thaw. Cut your smoked sausage into slices. You will also need to crush 1/2 cup of corn flakes.

Place 6 slices of the bread in a 9" x 13" casserole dish then cover each slice of bread with a slice of American cheese. Sprinkle 1/4 cup of chopped green onions and 1/4 cup of chopped green bell pepper over the slices of bread. Spread out half of the spinach over the slices. Finally, place the smoked sausage slices over the bread. Top that with the other six slices of bread. Slice each sandwich in half diagonally.

In a medium bowl, mix three eggs with 2 cups of milk well. Add salt and pepper to taste. Pour the egg mixture over the bread and let this set at least a couple of hours (overnight is preferable) in the refrigerator.

Preheat the oven to 350 degrees. Spread the remaining spinach over the top of the bread then sprinkle with 1/2 cup of crushed corn flakes. Bake the souffle in the oven for 40 - 45 minutes or until it is puffy. Let it stand for 5 minutes before serving.
