Sweet After School Snacks

Most health experts recommend that you greet your children with an apple and a glass of milk when they return home from a long day at school. It's a great suggestion, and frankly, my daughter would eat the nutritious snack without complaint. However, there is something to be said about indulging in a sweet treat after a long week at school.

If you are looking for yummy ways to reward your son or daughter's efforts in class this week, then consider making the following decadent desserts:

OREO MUD PIE

Ingredients:

1 1/2 cups Oreo cookies (about 15)

1/4 cup butter, melted

2 pints chocolate ice cream, softened

1/4 cup chocolate syrup

1 cup chocolate chips

Whipped cream

Directions:

Preheat oven to 350 degrees.

In a bowl, combine cookie crumbs and butter.

Press onto bottom and sides of an ungreased 9-inch pie plate.

Bake for 10 minutes. Let cool.

Spoon softened ice cream into crust. Drizzle chocolate on top. Cover and freeze until firm.

Remove from the freezer 10 to 15 minutes before serving.

Garnish with chocolate chips and whipped cream.

AFTER SCHOOL CHOCOLATE CARAMEL BARS

Ingredients:

1 pkg. yellow cake mix

1/3 cup oil

2 eggs

1-12oz. pkg. semi-sweet chocolate chips

1 cup toffee bits

1 cup white vanilla chips

1/2 cup butter

32 caramels unwrapped

1-14oz. can sweetened condensed milk, not evaporated

Directions:

Heat oven to 350 degrees.

Line a 13-by-9-inch pan with foil, overlapping edges, then spray with Pam.

In bowl combine cake mix, oil and eggs, blend well.

Stir in chocolate chips, vanilla chips and toffee bits. Mixture will be thick. Press 1/2 of mixture into greased and foiled pan.

Bake for 10 minutes.

In a small saucepan combine caramels, butter and condensed milk. Melt over medium low heat making sure mixture does not burn. Melt until smooth stirring often.

Remove partially baked crust. Slowly pour caramel mixture over baked crust. Crumble remaining cake mixture over caramel.

Return to oven and bake an additional 25 minutes until golden brown.

Cool on counter 20 minutes, and then place in refrigerator.

When ready to serve, remove bars from refrigerator and cut into squares.
