Simple Ways to Make Back-to-School Fun

In my home, nothing sparks a chorus of groans louder than hearing the following three words: Back to school. Of course, returning to class doesn’t have to be wrought with tears, fears and jeers. With a little creativity you can turn the worst part of the year into one of the best. Here are some ideas on how to make it happen: Movie Night: This is a great way to motivate your child to study hard in school without constantly being nagged. A few days before the new school year gets underway, clean a large empty jar and place it … Continue reading

Healthier Snacks for the New Year

My 7-year-old’s New Year’s resolution: See how many ounces of chocolate syrup she can pour over Peanut Butter Cheerios before getting a stern, “Enough!” from me. And here I thought she was adding the chocolate syrup to white milk. Hmmm… chocolate milk over Peanut Butter Cheerios… that doesn’t sound half bad. We are Reese’s Peanut Butter Cup fans around here; however, since we’ve made like lemmings and are trying to eat healthier in 2012, it’s out with the sugary vending machine staples and in with nutritious munchies like Peanut Butter Cheerios. Excuse me. I mean Multi Grain Cheerios Peanut Butter. … Continue reading

Sweet and Scary

My daughter’s school Halloween party is less than 48 hours away. That doesn’t leave me with much time to whip up nut-free, gluten-free, dairy-free, sugar-free, organic cupcakes for the kiddos. I’m kidding. Kind of. Sort of. Not really. While there is a strict all-school policy in place regarding the type of treats you can bring into the classroom (regardless of whether or not any of the kids are allergic to a certain food), my daughter’s teacher found a loophole, which allows kids to devour sweets on Halloween, without having to endure detention. She’s orchestrating a sweet swap. Kids will bring … Continue reading

After School Snacks

Why is it children come home from school starving? The minute Hailey would walk in the door after school she was raiding the cabinets and refrigerator. Since I was a single, working mother there wasn’t anyone at home to supervise her choice of after school snacks. Many times she would fill up on things that weren’t good for her and then she wouldn’t eat dinner. I needed to make better choices at the grocery store and I also needed to find some things Hailey could make that didn’t require any appliances since I wasn’t comfortable with her using kitchen appliances … Continue reading

More Sweet Treats for the Lunchbox

Trying to think of something for a sweet change to put in the school lunch box or for those after school snacks? Here are a couple more gluten free sweet suggestions. Of course there’s no reason grown ups won’t enjoy them every bit as much as the kids. They’re both really easy to make and won’t take long, which is always a plus in my book. Apricot Fruit Bars Ingredients Three quarters cup dried apricots Hot water 2 cups SR gluten free flour Half teaspoon baking powder 1 cup raw sugar Three quarters cup coconut 6 ounces melted margarine Half … Continue reading

Sweet After School Snacks

Most health experts recommend that you greet your children with an apple and a glass of milk when they return home from a long day at school. It’s a great suggestion, and frankly, my daughter would eat the nutritious snack without complaint. However, there is something to be said about indulging in a sweet treat after a long week at school. If you are looking for yummy ways to reward your son or daughter’s efforts in class this week, then consider making the following decadent desserts: OREO MUD PIE Ingredients: 1 1/2 cups Oreo cookies (about 15) 1/4 cup butter, … Continue reading

Healthy Back-to-School Snacks Your Kids Will Actually Eat

If you are a health-conscious parent, then you face a daunting task this time of year. You could go all natural and fill your children’s lunch boxes exclusively with fresh fruits, vegetables and nuts, but the likelihood that they would happily devour the healthy goods you packed for them is slim. Your other options include making your own tasty and nutritious snacks or packing “healthier” store-bought options, like the ones listed below: Snikiddy Chocolate Chippers Cookies: The sweet treats contain less sugar than other cookies on the market. They also come in portion-controlled packets, and kids who tested them high … Continue reading

After School Brownies You Can Be Proud Of

So my kids don’t go to school, but that doesn’t mean they don’t get the 3 o’clock munchies. For the last two years, which we are now affectionately referring to as the “twin years”, I just went to the grocery store and bought the pre-packaged stuff just like everyone else. There is an equation in life, particularly when life gets very hectic, that says sometimes it’s easier to just spend the money in order to save the time. But no longer is it easier to spend the money. My old ‘cooking self’ is back again, and I am now on … Continue reading
