Tamale Pie

I love Mexican food and this recipe for tamale pie is sensational. My husband went out with his best friend tonight, but tomorrow night, he is getting this for dinner!

For this recipe, you will need yellow corn meal, garlic spread (crushed garlic can be used as well), one pound of ground beef, one medium onion, a can of whole kernel corn, shredded cheddar cheese, olive oil, one can of black whole olives, chili powder, and two cans of tomato sauce.

To prep for this recipe, you will need to chop your onion into 1/4 to 1/2 inch sections. Leaving the pieces a little bigger gives some texture to the onion after cooking.

In a skillet, heat two tablespoons of olive oil over medium heat. Put the chopped onions in and let them saute for about 5 minutes until softened. Remove half of the onion and place the pound of ground beef in the skillet with the remaining onion. Add salt and peppers as desired. If you wish, you can also add a little Worcestershire sauce or garlic powder to the ground beef as it cooks. Let the ground beef cook until browned then drain the grease from it. Add the onions you took out earlier back to the skillet. Add one can of whole kernel corn, one can of whole black olives, two cans of tomato sauce, and 1 teaspoon of chili powder and let this cook for 5 minutes.

Preheat the oven to 400 degrees. Bring 3 cups of water to boil in a saucepan. Once that starts to boil, whisk in 1 cup of yellow corn meal, and 1 teaspoon of garlic spread. Then add 1 cup of cold water to thin the mixture. Pour the meat mixture in a 9" x 13" baking dish. Using a spoon, drop spoonfuls of the corn meal mixture on top. You may need to spread it a bit with a knife if it is too thick. Top with 1/2 cup of shredded cheddar cheese and bake for 20 minutes.
