Garlic and Cheese Grits

Of all the Southern food I’ve learned to cook over my last twelve years of marriage, grits remains high on my ‘disdained’ list. Why not eat oatmeal? But my husband insists it’s simply not the same. Frankly, I continue to remain unconvinced although I have to say that this particular recipe has made me think twice. Grits, or better yet, hominy grits is a southern dish made from corn. Hominy is the dried kernel of a corn, after the hull and germ have been taken away. It dates back to Native Americans and as I understand it, was one of … Continue reading

Ask a Food Blogger: All About Oatmeal

Question: I’m trying to makeover my diet and so I started eating oatmeal. But someone said instant wasn’t good enough if I want all the nutrients–is this true? Yeah–pretty much. There are several different types of oatmeal and as far as oats go. . .instant is a distant last in the grand hierarchy of oatmeal products. The essential different in oatmeal is the processing. Like most foods, the more its processed, the less nutritious it is as the processing depletes many of the nutrients. Here is a quick primer on oats. The Problem with Instant Oatmeal As I mentioned before, … Continue reading

The Sneaky Mama’s Out the Door Oatmeal

I had mentioned earlier that one of my favorite, super healthy breakfasts is baked oatmeal. It’s a whole grain, you can add spices to it and very little sugar and you really have a completely fantastic, nutritious breakfast. On the other hand, it does have to cook. And you really can’t do oatmeal the night before and have the kids be happy about it. I do get up before my kids but I am fairly convinced that they are part Hobbit (of Lord of the Rings fame) because they must eat constantly. They literally sit up in bed and say, … Continue reading

Homemade Ice Cream Sandwiches

There is nothing that ‘screams’ summer more to me than ice cream sandwiches. For some reason this year, I have returned to the kitchen to make more frozen goodies and treats. (I’m sure that it has to do with the twins being older now.) In any case, this is next on our ‘to try’ list of recipes. Is it worth it to make your own ice cream sandwiches? Um. . .YES!!! You can customize it anyway you want by filling your brownie with your choice of ice cream, running the sides through coconut or even adding ice cream topping to … Continue reading

Shopping List and Tidbits for April 24 to April 28

In case you’re new to the food blog, each week instead of doing a week in review, I have created a shopping list and listed the interesting food related items that I blogged on. This way, you can catch up on your reading, as well as print the blog and use it as a shopping list for your favorite recipes. I admit that I’m experimenting with formats and so any feedback is appreciated! Last week, I was so heavy on the tidbits, and low on the recipes that this week I decided to do lots of recipes. The food news … Continue reading

The Sneaky Mama’s Hot Breakfast on a Cold Morning: Pumpkin Oatmeal

I have mentioned before how the Sneaky Mama loves baked oatmeal. It is a great way to get your kids to eat oatmeal and oatmeal is packed with oodles of nutritional gems. This morning it is rather cold and rainy and so, as you may have guessed by now, we are having oatmeal. But in our house, if I make plain oatmeal I might as well make it and then throw it on the floor because certainly, that’s what my children will be doing! (Well, at least the toddlers. . .the older ones do know a little better. . .) … Continue reading

The Sneaky Mama and Her Oatmeal

The Sneaky Mama is back with another delicious and healthful way to feed your picky eaters! For those of you who are new or don’t remember, the sneaky mama (yes, it’s really me–but don’t tell anyone!) is a pro at getting good healthy food into her extremely picky daughter and her other not so picky kids. Why Oatmeal? Oatmeal is just one of those miracle foods. It is a whole grain, and is high in water soluble fiber. The reason I love oatmeal is that it is a win/win breakfast for our family: it’s good for my husband and I, … Continue reading

Imagine That: My Chef’s Helper Likes to Eat

As a busy mom of five kids who mostly cooks on my own because I (mostly) refuse to feed my kids prepackaged junk, I’m always asked what we do to conquer the picky eater. I’ve offered a few ideas before and several of my own recipes under the heading “The Sneaky Mama.” I can’t say that we’ve always had 100% success, but my children eat healthily most of the time and they all consume some manner of fruits and vegetables daily. However, my best “trick” to get my kids to like what they’re eating is to let them help me … Continue reading

Nifty Things to Do With Crescent Rolls

I had two tubes of refrigerated crescent rolls. I had at least a cup full of cinnamon/brown sugar mix left over from the last time that I made cinnamon rolls. I had a living room full of hungry eyes staring at me. I had a brilliant idea. Why it has never occurred to me to stick stuff in crescent rolls before, I can’t tell you. But it only makes sense that stuffing them with some delicious filling, makes for a delicious snack and can make for an impressive spread. They bake perfectly every time and so they make a no … Continue reading
