Three Easy Lunches

Whether you're a stay-at-home-mom and need to make an easy home-made lunch every day or you just like a good weekend lunch, here are 3 easy lunches to make any day of the week.

Lunch #1: Tuna On Crackers + Tomato Slices Open a can of tuna fish, mix it with 1 heaping tablespoon of mayo and serve with crackers. You and your family can then spread the tuna/mayo mixture over each cracker or just scoop the tuna up with the crackers. Have a side of fresh tomato slices (season them up with salt and pepper) or chopped tomato for babies and toddlers.

Lunch #2: Macaroni & Cheese + Grapes Whether bought in a box from the grocery store or made from scratch, Macaroni and Cheese is another easy lunch. Besides the macaroni and the cheese, all you need are a little milk and butter. You, of course, boil the macaroni, drain, then add the butter, milk, and cheese packet (or your own shredded cheese), and mix together. If you make this from scratch, look for a whole wheat macaroni, instead of the regular kind, to make this meal really healthy. Give everyone a side of grapes for a serving of fruit with your easy lunch.

Lunch #3: Grilled Cheese Sandwich + Tomato Soup One of my favorite easy lunches is a Grilled Cheese Sandwich and Tomato Soup. These two are a perfect lunch combination. Canned tomato soup from the grocery store is too easy to open up, add milk, and heat up. It makes for a quick tomato soup. Then, add shredded cheddar or other cheese to bread slices and heat in the microwave (or over a hot buttered skillet) for a delicious sandwich. Dip the grilled cheese sandwich into the tomato soup for a savory and easy lunch!
