Who Won’t Be Eating Turkey Today

I am not a huge fan of turkey, but Thanksgiving just doesn’t seem like Thanksgiving without one, at least to me. But, there are plenty of celebrities that won’t be eating turkey this year because they are vegetarian or vegan. PETA named funny man Russell Brand one of its Sexiest Vegetarian Celebrities of 2011, so needless to say he won’t be gnawing on a turkey leg tomorrow. The female Sexiest Vegetarian Celebrity of 2011 was Kristen Wiig of “Saturday Night Live” and Bridemaids fame, so no turkey for her either. There are several Academy Award winners and nominees who will … Continue reading

Winter Warmer- Vegetable Chili

Chili is one of those foods that speed up the metabolism. So if you’re trying to lose weight, chili is an excellent choice. It is also a warming food in winter. Lentils and beans add extra fiber. Lentils go unnoticed in this by fussy children. And once again its gluten free. Although there are a number of ingredients on this vegetable chili, it’s not hard to make and it tastes scrumptious. HINT Cook the lentils and beans the night before. I always double or triple this recipe and freeze the rest till needed. This chili will freeze well and tastes … Continue reading

Warm Up With Chili

Fall is one of the best times of the year to make chili. After all, nothing beats digging into a piping hot bowl of hearty chili following a marathon leaf-raking session. Chili is also great to serve up during Sunday football tailgate parties. Regardless of where you serve this highly versatile dish, the preparation is a breeze. My favorite chili recipes are delicious, nutritious, and will help warm up the coldest autumn day. See for yourself: EASY CROCK POT CHILI Ingredients: 1 can pork and beans 1 can kidney beans 1 can pinto beans 1 can black beans 1 can … Continue reading

Presidential Chili

Make that Presidential Hopeful Chili. Presidential hopeful Barack Obama just wrapped up a weeklong vacation to his boyhood hometown of Honolulu, Hawaii and while he was in paradise he dined on a local favorite—-Hawaiian-style chili. Not once, but twice, according to news reports. I don’t blame the U.S. Senator from Illinois. Like Obama I was born and raised in Hawaii and it’s no secret that the Islands are home to some of the best chili in the world. (And unlike here in the Midwest fast food chains don’t yank the hearty dish from its menus during the summer months.) What … Continue reading

Aimee’s Healthy Vegetarian Chili

Beans are an amazing food — and not just because of their “magical” powers! Beans have more antioxidants than superfoods like blueberries and cranberries. They’re also full of fiber; a one cup serving can give you half of the daily recommended amount of fiber. I love beans, and here’s one of my favorite bean-laden recipes: vegetarian chili. What you’ll need: 2 15 ounce cans of black beans (they’re rich in antioxidants that fight heart disease and cancer) 2 15 ounce cans of kidney beans (they’re full of thiamin, a vitamin that protects memory) 2 15 ounce cans of garbanzo beans … Continue reading

Turkey Posole

Posole is a traditional Mexican dish from the region near Jalisco. It’s generally made with pork and is typically served around the holidays. It’s a very thick soup that also includes hominy, garlic, onion, chili peppers, cilantro, and broth. This version is great for your leftover turkey. You can of course, serve it using leftover pork as well. Generally posole contains poblano chilies but I substituted jalapeno chilies instead because I prefer them. I’m sure if you are familiar with and love Mexican cooking–you’d know the difference. But if a lack of perceived authenticity doesn’t bother you, go ahead and … Continue reading

How Do You Make Your Turkey Unique?

Yesterday I dedicated the food blog to making the perfect turkey, starting with the stock that you use to baste it all the way to the gravy. But many families have special spices or glazes that they use to make their turkeys unique from their neighbors. Here are a few special combinations if you’re wanting to try something different this year. For basic roasting directions, make sure to read about the perfect turkey. Orange and Maple Roasted Turkey Combine 3/4 cup orange juice and 1/4 cup syrup in a small saucepan; bring just to a boil. Remove from heat; set … Continue reading
