Two Banana Cookie Recipes

I love bananas, but my little one will put a slice in his mouth, then spit it out. As a result, I decided to search for banana cookie recipes. The first one is not as healthy as the second one, but they both sound delicious!

Jumbo Banana Cookies

For this recipe, you will need shortening, butter, white sugar, eggs, bananas, evaporated milk, vanilla extract, distilled white vinegar, all-purpose flour, baking soda, salt, chopped walnuts (optional), and confectioners' sugar.

Combine 1/2 cup of shortening, 1/2 cup of softened butter, 1 cup of white sugar, 2 eggs, 1 cup of mashed bananas, 1 teaspoon of vanilla extract, 1/2 cup of evaporated milk, and 1 teaspoon of distilled white vinegar in a bowl until it is light and creamy.

In another bowl, mix 3 cups of all purpose flour, 1 1/2 teaspoons of baking soda, and 1/2 teaspoon of salt. Add to the first mixture. Add 1 cup of chopped walnuts if desired. Let this chill in the refrigerator for an hour.

Preheat your oven to 375. Grease a cookie sheet and drop small spoonfuls of the dough on the sheet, about two inches apart. Let them cook for 15 minutes then let them cool.

To make a frosting, combine 2 1/2 cups confectioners' sugar, 2 tablespoons softened butter, 1/4 cup evaporated milk, and 1/4 tsp vanilla. Beat that until it is soft and creamy. Once the cookies have cooled, spread the frosting on top of the cookies.

Healthy Banana Cookies

For this recipe, you will need three bananas, rolled oats, dates (pitted and chopped), vegetable oil, and vanilla extract.

Preheat your oven to 350 degrees. Mash the three bananas in a large bowl then add 2 cups of rolled oats, 1 cup of pitted and chopped dates, 1/3 cup of vegetable oil, and 1 teaspoon of vanilla extract. Mix everything well then let it sit for 15 minutes.

On an ungreased cookie sheet, drop small spoonfuls of the cookie dough about 2 inches apart. Bake for 20 minutes or until lightly brown.
