Easy Oreo Cheesecake

For this recipe you'll need:

1 package Oreo Chocolate Sandwich Cookies, divided

¼ cup butter or margarine, melted

4 (8 ounce each) packages cream cheese, softened

1 cup sugar

1 tsp. vanilla

1 cup sour cream

4 eggs

To make:

Preheat oven to 325 degrees.

Using a food processor, grind 30 Oreo's until fine. Add the melted butter and mix well. Pour this mixture firmly onto the bottom of a 13x9-inch baking pan lined with aluminum foil.

In a large bowl, beat cream cheese, sugar and vanilla with an electric mixer set to medium speed. Add sour cream and blend well. Add the eggs, 1 at a time, just until each egg is blended in. Chop the remaining cookies and carefully stir 1 ½ cups of cookies into the batter. Pour the mixture over the crust and top the cheesecake with the remaining cookies.

Bake in preheated oven for 45 minutes or until the center is nearly set. Cool in the oven or on the stovetop, then refrigerate for at least 4 hours. Makes 16 servings.

Easy Cheesy Chili Dip:

For this recipe you'll need:

1 (8 ounce) package cream cheese,

1 can (10.5 ounces) chili

½ cup Cheddar cheese, shredded

2 TB chopped cilantro

To make this recipe:

Unwrap the cream cheese and place it on a microwave-safe plate. Top the cream cheese with the chili and cheese, and microwave on high heat for 45 seconds to 1 minute, until the cheese melts. Sprinkle with cilantro and serve with crackers. Makes about 24 servings of 2 TB each.
