Two Excellent Meat Dishes for Your Super Bowl Party

Are you still looking for Super Bowl recipes? I have given you a couple of good appetizer ideas, but you are going to have to have some meat dishes (unless everyone is vegetarian). So here are a couple of recipes that will win over the crowd:

Shish-Ka-Bob Uecker

This is a great recipe if you are going to be in a warm climate during the Super Bowl.

Your grocery list will be: 16 ounces of Smoked Bratwurst (precooked) 1 medium Onion 1 medium Summer Squash 1 medium Green Pepper 2 medium Red Bell Peppers Hot Mustard Apple Juice concentrate (frozen) Soy Sauce. Of course, if you do not have any skewers, you will need some for this recipe.

Cut your bell peppers into 1-inch squares. Cut the squash into 1/2 inch slices and the onion into wedges. In a freezer bag, combine 1/2 cup of soy sauce, 1/4 cup of the thawed apple juice concentrate, and 3 tablespoons of hot mustard. Mix well then add vegetables. Refrigerate this for one hour.

Drain the vegetables, but keep the marinade. Cut your bratwurst into 1-inch slices and alternate the bratwurst with vegetables on the skewers. Brush on the marinade and place on a grill over medium hot coals. Turn and baste often. After about 15 to 20 minutes, the vegetables should be done and the shish kabobs are ready to serve. This makes about 4 to 6 servings so if you are entertaining more people, multiply the recipe.

Bourbon Chicken

Not just for Super Bowl weekend, this makes a great recipe for everyday eating as well.

Your grocery list is: 1 1/2 pounds of chicken breast halves (boneless and skinless) Soy Sauce Worcestershire Sauce Red Wine Vinegar Bourbon Whiskey Dijon Mustard Brown Sugar 2 Garlic Cloves Olive Oil Salt and Pepper.

Mix 2 tablespoons of olive oil, 2 tablespoons of Dijon mustard, 1/4 cup of bourbon whiskey, 2 tablespoons of red wine vinegar, 2 tablespoons of Worcestershire sauce, 2 tablespoons of soy sauce, 1/4 cup of brown sugar, 2 minced cloves of garlic, pinch of salt and pepper.

Combine the chicken with the above mixture. Let the chicken sit in the marinade from between two hours to 24 hours. Remove the chicken and discard the marinade. Cook over a grill with medium heat for between 15 and 20 minutes. Again, you may need to adjust your recipe slightly if you are having a lot of guests at your party.
