Two RO*TEL Dip Recipesby Libby Pelham | More from this Blogger 23 Feb 2006 10:53 PM You see it at almost every party you attend - at least I do. Right there on the table, usually in a crock-pot...a party favorite, RO*TEL dip. Just who created this dip we cannot seem to get enough of? Was it the RO*TEL people or was it the Velveeta people? It must have been the inventors of RO*TEL or we would just call it Velveeta dip. If you have been living on Mars the last 20 years and never had RO*TEL dip, here's a couple of recipes to try! Original RO*TEL Dip For this favorite, you will need 1 can of diced RO*TEL Tomatoes and Green Chilies and 1 pound of Velveeta processed cheese. Place your can of RO*TEL Tomatoes and Green Chilies into a saucepan and turn on medium heat. Cut your pound of Velveeta into one-inch cubes and place those into the saucepan as well. Stir slowly until the spread melts. It may be a little thin at first, but if you let it cool for a few minutes, it will thicken up. Some people like to use the microwave for melting these two ingredients together, but I still like a saucepan. It is slower, but you do not have to worry about burned cheese! Modified RO*TEL Dip Somewhere along the way, someone decided original RO*TEL dip was not good enough. In the modified version, you make up the original recipe, but you throw in extra items. You can add meat including cooked hot pork sausage (as my stepmother does), fried hamburger (as I occasionally do) or canned chili (like a friend of mine). You can also throw in other extras like diced onions, diced jalapenos, diced tomatoes, limejuice, picante sauce, or cream cheese. Regardless of whether you make original or modified RO*TEL dip, serve with chips and you and your guests will love it!
