Two Minute Black Bean Dip

According to the official Super Bowl web page countdown calendar, there are 35 days, 1 hour, 49 minutes and 9 seconds until Super Bowl XL. Of course, by the time you read this, it will be even less, but you still have plenty of time to plan your Super Bowl Party. This will include delectable goodies to feed the famished fans at your house.

Since we still have plenty of time to prepare, I will post a few recipes each week until the Big Game. One thing is for sure - no matter which two teams make it to the final, Super Bowl + Guests = Hungry! We will start today with a bean dip that is sure to please everyone.

This dip can be made in about two minutes, so you may want to save this recipe as an emergency "oh no, I need more food" item. But regardless, of whether it is a backup dish in case you run out or a dish you plan to serve, you will need to have your ingredients on hand.

Your grocery list will consist of one 15-ounce can of seasoned black beans (Ranch Style works great!), two green onions, one lime, ground cumin, dried crushed oregano, sour cream, and Tabasco. If you wish, you can add freshly chopped veggies such as diced tomatoes, peppers (red, yellow, or green), cucumber, red onion, or spice it up a bit with jalapenos - whatever sounds good to you. Just be sure to purchase a couple of bags of chips as well for this yummy dip.

After opening your can of beans, pour them in a mixing bowl.

-Chop the green onions and add them to the beans. -Cut the lime in half. Squeeze the juice from one-half into the mixture. -Add 1/2 teaspoon of ground cumin, 1/4 to 1/2 teaspoon of dried crushed oregano, and 1/2 teaspoon of Tabasco and stir well. -Add any chopped veggies you wish. -Adding two or three tablespoons of sour cream will make the dip creamier and easier to dip with chips.

The flavors blend well if you have between 15 and 30 minutes for the dip to set, but don't worry if you don't have the time. Your guests will love it anyhow!
