Spicy Vegetable Tagine

If your family thinks vegetables are bland and boring I suggest this recipe will help them get over this attitude. Mick is a big fan of meat and once would not have considered anything meatless a meal but he loved this. An advantage of this recipe is that it is wheat and gluten free as well as dairy free. Hint Don’t just cook up enough for one meal cook a huge pot of it and freeze the rest for quick meals. Vegetable Tagine Ingredients 1 tablespoon light olive oil 1 small aubergine sliced 1 Spanish onion sliced 3 cloves garlic, … Continue reading

Mixed Vegetables Au Gratin

Since I’ve been telling you what a fan I am of vegetables recently, I thought it was about time I gave you another recipe using vegetables. This one is always a winner. It is a good recipe for vegetarians and is also gluten free. The benefit is it can be prepared a day ahead and kept covered in the fridge till needed. You can also freeze it. It will keep for 3-4 weeks. It is however, unsuitable to microwave. The other disadvantage is it not suitable for those on a dairy free diet. Mixed Vegetable Au Gratin Ingredients 8 ounces … Continue reading

Vegetable Rolls

Here’s another recipe using gluten free frozen pastry. It’s a good way to get children to eat vegetables. HINT You can prepare much of this ahead as the filling for this dish can be made several hours before it is needed. Keep the filling mix covered in the fridge till you are ready, but the rolls themselves are best cooked as close as possible to the time require. Because of the cabbage content this recipe is unsuitable to freeze. It is also not suitable for the microwave. Of course, as any of you who have been reading my home blog … Continue reading

Winter Warmer- Vegetable Chili

Chili is one of those foods that speed up the metabolism. So if you’re trying to lose weight, chili is an excellent choice. It is also a warming food in winter. Lentils and beans add extra fiber. Lentils go unnoticed in this by fussy children. And once again its gluten free. Although there are a number of ingredients on this vegetable chili, it’s not hard to make and it tastes scrumptious. HINT Cook the lentils and beans the night before. I always double or triple this recipe and freeze the rest till needed. This chili will freeze well and tastes … Continue reading

Crock Pot Sweet Curry

Given the cheap bulk rump we bought recently here’s another crock pot recipe using beef. However if rump is not cheap in your area you can use blade, skirt steak or gravy beef. Just allow another hour in cooking time. This is one of those recipes that I made up on the spur of the moment. It is so easy because nearly everything goes in at the beginning and that’s it except for the yoghurt which is added in the last half hour. You will notice too it contains light agave nectar. This is a natural sweetener than can be … Continue reading

Moroccan Beef

I’ve been enjoying using Slow Cooker- easy and delicious recipes for all seasons by Sally Wise. I’ve often started with a basic recipe from her book and added and adapted as I always do. This one Mick loved so much he would have happily sat down to it the next night too. The original recipe was for Moroccan Lamb using lamb mince. Here is my variation using beef and a few other interesting changes. Moroccan Beef Ingredients2 tablespoons sunflower oil 16 ounces rump or round steak (You can use cheaper cuts or buy what is on special) 2 tablesppons rice … Continue reading

Corn Bake

Since I’ve been on a bit of vegetable theme lately on this blog, I thought I’d share another one with you that is a particular favorite. Aside from tasting great, part of the attraction is once you’ve got the chopping and grating done, this is so simple it doesn’t take much time to make. Good for the busy cook. Although this recipe uses vegetables, it also includes bacon, so sorry, if you’re vegetarian you’ll have to pass on this one. In my opinion, it loses too much in taste if you omit the bacon. Sorry too, it won’t work for … Continue reading

3 Favorites Get The Thumbs Up

Recently on the radio,I heard a food expert talking about the benefits of certain foods- in particular certain vegetables. Now I’ve always been a rap for my veggies. I was always a child that happily ate my vegetables, with the exception of peas. But that’s another story. It’s always good to know that what you like is actually good for you and can help keep you healthy. Two of the vegetables he mentioned I use a lot, broccoli and lentils. I steam broccoli as a side dish to whatever meat or fish we’re having. Many of you will know I … Continue reading

A Cardinal Rule When Cooking

There’s a cardinal rule we should abide by when using a recipe given to us by someone else or from a magazine or cook book. That is to remember that not everyone’s taste buds are the same. This is especially important when dealing with dishes that have curry, chili or other hot, spicy ingredients. Yes, I am speaking from personal experience. Just recently I was cooking Korma Chicken using a packet of ingredients I bought on a shopping excursion. I should have realized Indian people have a higher tolerance than most Western people do but I had it in my … Continue reading

Favorite Cookbooks

Cookbooks are as individual as you are. When I look through my cupboard there are a pile of cook books. My daughter and daughter-law’s kitchens are much the same. Both, my daughter and daughter-in-law, like glossy cookbooks with color photographs of the finished product. I’m not a visual person. Hey I’m the person who always manages to misread signs relying on visuals. ‘Why can’t they just use words’ I cry. So I ’m happy to have a cookbook with no photos at all, just good recipes. Some people manage to keep their cookbooks spotless. Not me. You can always tell … Continue reading
