Yummy Mushrooms

I’m a big fan of mushrooms and try to forget the fact they really are fungi and think of them as vegetables. Unlike the Romans who believed mushrooms were a gift from God only to be used on special occasions, I use mushrooms a lot. When they are cheap I buy them in large quantities. I tend to put them in just about every casserole or crock pot meal I make as well as using them in pies, enchiladas, salads, quiche, and just about anything else I’m making or simply on their own. A trick my son-in-law taught me is … Continue reading

Aimee’s Inside Out Stuffed Mushrooms

I love mushrooms — and now we have a good reason to love them. Recent research from Tufts University found that common white button mushrooms are health heroes! Button mushrooms can give your immune system a boost, fight viruses, and help protect against cancer. They’re also a low calorie alternative to pasta and rice. Swapping one cup of button mushrooms for one cup of rice or pasta in your favorite recipes can save you two hundred calories. Make the switch twice a week for a year and you can lose as much as six pounds with very little effort! They … Continue reading

Don’t Be Fooled By Size

Sometimes we can be fooled by thinking the biggest is the best. It ‘Ain’t Necessarily So,’ to quote an old Normie Rowe song from the 1960s. Lately I’ve been having orange juice with breakfast each day in an attempt to build up vitamin C and not end up with colds and flu. Recently we bought some navel oranges. Large and orange they looked beautiful. They were sadly disappointing. One large orange and I was lucky to get even half a glass of orange juice from it. At first I thought it was just me but even with the electric juicer, … Continue reading

Food and Allergies- A Solution

For years we’ve been hearing the benefits of honey. When I was a child, my mother used honey and lemon juice for sore throats. Honey for many people is a great addition to a recipe and can be substituted for sugar. But some of us are allergic to honey. In my case it causes tinnitus. Sounds bizarre but I have proved it over time to be true. Tinnitus is that constant ringing noise in your ears. In my case it sounded like I had a steam train in my head. It gets worse when it is quiet and makes it … Continue reading

Quick and Easy Meal

Sometimes you just need something quick, easy and filling for a meal. On nights when I am in this position, this recipe is a good option. It’s also not an expensive option which given the economic climate is a point in its favor. This is of course a gluten free version. Ingredients 16 ounces ground beef 1 tablespoon Shiraz 1 onion 2 cloves garlic Half green bell pepper 1 teaspoon chili flakes 1 teaspoon Italian herbs 3 tablespoons tomato paste Half a 15 ounce tin of brown lentils 1 15 ounce tin mixed beans 6 gluten free corn tortillas. I … Continue reading

Veal Paprika

Veal is one of those meats people either love or they can’t stand. My mother couldn’t eat veal. It made her sick. I love it. I used to buy a side of veal for the freezer. That was back in the days before veal prices got ridiculously expense. These days I mostly buy a shoulder to roast in the barbecue. I might cut some of the shoulder to use in this dish before cooking the roast. Otherwise if I see veal steak cheap I buy it. You can also use veal chops if you find them on special. But instead … Continue reading

My Love of Meatloaf

My dad makes a killer meatloaf. When he pulls it out of the oven it’s not swimming in oil nor is it dehydrated and crusty like decade-old fruitcake. Rather, it’s a perfectly juicy blend of meat and spices glistening with a glaze of his secret tomato sauce. I left home after graduating from high school and have never been able to find a recipe that came anywhere close to my dad’s famous meatloaf. Boston Market’s meatloaf is quite tasty, as is the version served at The Machine Shed, but they don’t include all of the extras my dad puts in … Continue reading
