Zucchini Cobblerby Libby Pelham | More from this Blogger 31 Jul 2006 07:58 PM If you have been reading my food blogs, you know I have a two year old that will only eat three things - pizza, French fries, and Goldfish crackers. Okay, there are a couple of other things he will eat, but it does not include any vegetables. When I try to give him a veggie, he shakes his head and refuses to even try it. There is nothing I can do to get him to even give a vegetable a chance. I am desperate to get some vegetables in this child, so hopefully, when I make this recipe, he will like it because it seems like it would be bad for him. For this recipe, you will need three to four large zucchinis (enough to make eight cups chopped), lemon juice, white sugar, ground cinnamon, ground nutmeg, all purpose flour, and butter. To prep for this recipe, you will need to peel and chop your zucchini. Place a large saucepan over medium heat and put the 8 cups of chopped zucchini and 2/3 cup of lemon juice in it. Stir and cook until the zucchini is tender, which should take about 15 to 20 minutes. Stir in one cup of white sugar, one teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg. Let that cook for one minute then remove from heat. Preheat your oven to 375 degrees. Grease a 10" x 15" baking dish. Combine 4 cups of all purpose flour and 2 cups of sugar in a large bowl. Cut in 1 1/2 cups of butter with two knives until the mixture is coarse and crumbly. Add 1/2 cup of the butter mixture to the zucchini and stir. Press the 1/2 of the remaining butter mixture on the bottom of the baking dish. Spread the zucchini on top and sprinkle the rest of the butter mixture on top of it. I have an "apple" pie recipe that also uses zucchini. They make a good tricky substitute. And at the end of this month. . .I will try to blog on picky eaters. I have the queen of picky eaters and have been fairly successful at getting veggies & fruit into her without her even knowing it! She vomited when we would put things in her mouth. Actually, she threw up AT LEAST once a week until about age 5 now it's down to every few months or so. Anything would trigger it--seeing something gross, smells, a texture that didn't sit well with her. It is generally genetic--my husband has it. If you ask her she doesn't think that she eats any fruits and vegetables but I am one sneaky mama. I'll blog on it soon! Catherine Ipcizade (5617) 01 Aug 2006 03:59 PMhahaha..with my first child I was seriously freaked out because all he wanted to eat was string cheese for the longest time. Thank goodness that passed. Now, with a Turkish dad, he eats lots of things other kids might not, like hummus, shredded carrots in yogurt, eggplant, etc. Thank goodness! Good luck with your little guy, Libby. He'll come around. :-) Little cutie. And by the way, those Goldfish crackers are dangerous...for me...heheheheheh Bonnie Sayers (1298) 01 Aug 2006 05:25 PMI get at Trader Joe's Fruit & veggie bears - dietary supplement by L'il Critters. They are tasty sour fruit and veggie gummy bears and my son loves them. There is no wheat, milk, eggs, peanuts, tree nuts, soy, artifical colors or preservatives and it includes Vitamins A, C and E. One of the ingredients is black carrot juice concentrate. There was also a company called healthy sprinkles. I bought a shaker of pineapple powder and put it on the popcorn. But wait--if I tell you now, I won't have anything to blog about so you'll have to wait until I'm done with my other blogs this month--hee-hee! Not wanting to try new things is very normal for his age. He will likely come around. My daughter is not your normal picky child. Now if only we could find a recipe using macaronia and cheese and goldfish crackers we'd all be so happy! Libby Pelham (12880) 01 Aug 2006 08:00 PMThanks Bonnie for the pineapple powder tip - he does like popcorn, although I try not to give it to him too much (still afraid of choking). We do give him the gummy bear vitamins and he gets plenty of juice and milk. Whatever he gets, it is working I guess because he goes on about 110 mph all day until he drops at night - LOL!
